And it is apple kuchen season again! Always excited to make our favorite family recipe. The secret is in the sourdough cake, the thinly sliced apples, and the cinnamon sugar topping.

Another xanthan gum creation to keep it low-carb: spinach dip! Sauteed some spinach and diced leek in oil, then added 2% milk, xanthan gum, garlic powder, broth powder, a bit of marmite, and parmesan cheese and cooked until thick. Broil the top to get brown, bubbly cheese and serve with crudite.

Used xanthan gum from my molecular gastronomy kit to make a balsamic-coconut dip for fruit. Also has some brown sugar and water in the dip. Delicious on strawberries and apples!

Amazingly easy to make homemade buffalo wings! We broiled up some chicken wings, and then mixed a 1:1 of hot sauce and butter. You can add more hot sauce or a more intense hot sauce to up the spice level. Toss the wings and enjoy!

The half-Jewish side of me grew up in delis where the first thing they did was bring you a platter of the most delicious pickles ever, including the elusive (if you aren’t in NYC or NJ) half-sour pickle. Since they are so hard to find, I learned how to make them. I started with farmer’s market cucumbers. It’s a low salt pickle made with white vinegar, and for these I also added strained yogurt whey and tons of garlic scapes. Then, they sat on the porch for about a week, and now I have fabulous half-sours for my BBQs this week!

The husband Billy, totally came up with the great idea to make mini-meatloaves using the Star Wars pancake molds! Vader is delicious with ketchup.

Homemade butterscotch. What’s the difference between butterscotch and caramel? Easy: caramel is made with white sugar, and butterscotch is made with brown sugar. Also it’s so much more delicious. I used this recipe, but it came out more solid.
